Ingredients
1PoundLean Ground Beef
1Box Spanish/Mexican Rice
1-16oz.Can Refried Beans
3TablespoonsMexican Seasoning
1-14.5oz.Tomato Sauce
1-14.5oz.Diced Tomatoes
1Medium Green Pepper
1Medium Onion
16oz.Cheddar Cheese
12-16Burrito Sized Tortillas
Instructions
Brown ground beef; drain. Cook rice according to directions. Cook onions & peppers until softened.
Add refried beans, tomato sauce and Mexican seasoning to the ground beef; mix well. Add diced tomatoes, onions, and peppers.
Remove from heat and set mixture aside. Allow to cool for 30 minutes. When mixture is cooled, heat tortillas in microwave for 30 seconds.
Add ingredients to center of tortilla, top with cheese.
Roll tortillas and place flat on a cookie sheet. (How to Roll Burritos) Place tray of burritos in freezer for an hour to flash freeze.
Wrap burritos securely in plastic wrap, foil or wax paper. (I prefer plastic wrap.)
Store burritos in a Ziploc baggie, labelled with date & reheating instructions.
REHEATING-Frozen: Remove wrapper, wrap in paper towel, microwave for 3 minutes, add 30 seconds for additional burrito. Thawed: Remove wrapper, wrap in paper towel, microwave for 1 minute 30 seconds, add 30 seconds for additional burrito.
